Makes 2½-3 dozen biscuits
6 cups flour
2 tsp. baking powder
1½ tsp. baking soda
1¼ tsp. salt
1½ cups shortening, at room temperature
2 cups buttermilk
1. Sift together flour, baking powder, baking soda, and salt.
2. Cut in shortening.
3. Make well in center. Add 2 cups buttermilk. Stir until just moist.
4. Knead 7-8 times.
5. Roll to ½” thick. Cut with floured biscuit cutter. Place biscuits on greased cookie sheet.
6. Bake at 450° for 12-15 minutes, or until biscuits are lightly browned.
My mother made delicious potato rolls. As soon as they came out of the oven we were ready to eat them. They were made out of fresh potatoes.
